Pressure Cooker Ribs

Ingredients

  • 1 rack baby back ribs
  • 2 large carrots, chopped in sections
  • 1 tablespoon smoked paprika
  • 2 teaspoons Cayenne Oil
  • Dry Rub for Ribs:
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 2 teaspoons Chilli Powder
  • 2 teaspoons black pepper
  • 2 tablespoons garlic olive oil
  • 1 teaspoon cinnamon powder
  • 1 teaspoon salt
  • ½ teaspoon cumin seed, ground
  • ½ teaspoon (1 g) Fennel seed ground
  • BBQ Sauce for Ribs:
  • 1 medium onion, minced
  • 3 garlic cloves, minced
  • 1 can strained tomatos
  • 1 tablespoon mustard powder
  • 1 teaspoon cumin powder
  • pinch of salt and pepper
  • ½ cup water
  • ? cup maple syrup
  • ? cup honey
  • 2 tablespoons Pineapple white balsamic
  • 2 tablespoons Dijon Mustard
  • 1 tablespoon brown sugar

Instructions

  1. Remove the membrane on the inside of the ribs. Cut away any excess fat and pat dry with paper towel. Apply 2 tablespoons of garlic olive oil all over the ribs, to the point they are moist, and slick, but not dripping wet. mix all the dry ingredients together and rub all over ribs. Set aside in plastic rap in the fridge.
  2. combine all BBQ Sauce ingredients and pour into the pressure cooker. Add the Paprika and Cayenne oil. PLace the ribs in the BBQ sauce, close the lid and pressure cookfrom anywhere from 16 minutes to 25 minutes according to your preference of tenderness. A short cook time will give more body to the meat, while a longer one will make it more tender and fall off the bone.
  3. While ribs cook, preheat oven to 450F. Once cooked, turn off the cooker and let it fully natural release pressure as there are liquids inside. Carefully open the lid once pressure has subsided.
  4. Set aside ribs carefully with tongs. Place them on a parchment covered baking sheet and cover in tin foil.
  5. Filter off any unwanted excess fat from the BBQ sauce with a spoon or oil separator.
  6. Place chopped carrots into the BBQ sauce and set the instant pot to sauté. Cook down until desired sauce thickness is achieved, usually 6 to 12 minutes. Once reduced, feel free to add more cayenne oil, paparika, brown sugar or liquid smoke to get desired taste.
  7. Apply the BBQ sauce to the ribs by brushing all sides of the meat, including the bones. Place the ribs on the top rack for 10 to 15 minutes.
  8. Serve the ribs out of the oven with remaining reduced BBQ sauce and carrots
